Christmas baking..

Coconut and Chocolate slices

coconut and chocolate slices

Ingredients

115g chopped butter
175g Digestive biscuits, crushed
50g caster sugar
pinch salt
75g dessicated coconut
250g plain choc chips (I only used 100g and it did the trick)
250ml condensed milk (I used carnation)
115g chopped walnuts

1. Preheat oven to 180 C. Melt butter on a low heat.

2. In a bowl combine crushed biscuits, sugar, salt and melted butter. Press mixture into bottom of an ungreased baking dish.

3. Sprinkle coconut over the base then scatter over the choc chips. Pour the condensed milk evenly over the choc. Sprinkle the walnuts on top.

4. Bake for 30 mins. Transfrer to a wire rack and leave to cool pref overnight. When cool cut into slices.

I cannot begin to tell you how good these are and are soooo easy to make.

And you may have heard we had a fair bit of snow the last two days. Here's a few family pics of us having fun in the snow. We are up to two snowmen and counting!

This recipe sounds SO good!! I just love digestive biscuits, and I think your plan to reduce the chocolate is a good one. Whenever I make chocolate chip cookies I ALWAYS reduce the chocolate so that it doesn't overwhelm the nice batter. :D

Hmmm, the cookies look soooo good.
We were also having lots of snow but it started melting two days before Christmas and there's not a lot left. But I don't mind as I don't particularly love snow. Your little son doesn't seem to enjoy it either, lol.
I hope you are enjoying a wonderful after-Christmas weekend.
